Potato with Cheese Tart
INGREDIENTS REQUIRED
15g unsalted butter,cubed
11 large waxy potato,peeled
1leek,cleaned,trimmed and thinly sliced
Salt and freshly ground black pepper
50g Munster Cheese,sliced
2-3 tbsp double cream
1 packet of good store-bought puff pastry
1 egg yolk
Method of Preparation
Preheat the oven to 190C.Grease a ovenproof dish with some butter.Cook the whole potato in a saucepan of boiling water until it is just tender,but not cooked through.Remove with a slotted spoon,drain and slice.Cook the leek slices in the same water for 2minutes until soft.Drain well.
Put the potato slices at the bottom of the dish,spread the leeks on top and season with salt and pepper.Place the cheese slices on top and spoon over the cream.
Roll out the pastry and place over the top,tucking the pastry down the slides as you would for a tarte Tatin. Brush the top with a beaten egg yolk.Bake in the oven for 40-45 minutes.When it is golden and puffed up,remove from the oven and invert onto a serving plate.Serve it hot with green salads.
