Chicken Tikka and Brown Rice Risotto

Ingredients Required :
300 g. boneless chicken thigh, cubed
1tsp lemon juice
4 tsp ginger- garlic paste
1tsp chilli powder
1/2 tsp turmeric powder
1/2 tsp garam masala
2tsp salt+ extra , to taste
300 g unpolished brown rice ,soaked for 2 hours
100ml olive oil+ extra according to requirement
4 tsp chopped spring onion
75 g parmesan cheese
50 g mascarpone cheese
Method :
Marinate Chicken in the lemon juice, ginger - garlic paste, powdered spices and 2tsp salt and set aside for six hours.Cook in an oven at 200C until done.Set aside.Boil the brown rice with a little oil and salt, until done. Drain rice and add chicken tikka and spring onion.
Stir in 100ml olive oil and cheese.Serve hot, garnished with cheese.

Coconut Infused Roasted Pumpkin Soup

Ingredients Required
2kg Pumpkin, peeled and cubed
1tbsp salt
1tsp chopped thyme
2 tbsp olive oil
200g leeks, roughly chopped
100g celery,  roughly chopped
50g carrot roughly chopped
50g onion roughly chopped
300ml coconut milk
1litre vegetable stock
A pinch of chilli flakes
Method :
Toss Pumpkin in 1 tbsp salt and the chopped thyme annd arrange on baking tray .Roast in an oven preheated to 180C for 7-8 mins. Set aside.
Heat Olive oil in a pan and saute vegetables until everything comes together.Stir in the coconut milk and vegetables stock abd bring to a simmer.Remove from heat and allow to cool slightly before pureeing to a smooth mixture.Add chilli flakes and check seasoning.
After its done serve it hot . Its Ready to eat

Mexican Tomato Soup

Ingredients Required :

6 tomatoes
3 spring onions, finely chopped
1 capsicum,finely chopped
3 tablespoons baked beans
3 teaspoons sugar
2 teaspoons chilli sauce
2 teaspoons oil
salt to taste
Ingredients Required For Dumplings :
1/2 cup cottage cheese
1 tablespoon plain flour
1 tablespoon coriander,chopped
1 teaspoon green chillies,chopped
salt to taste
oil for greasing
1/4 cup cheese for garnish ( grated cheese )

Method ;

Take the tomatoes in a shallow microwave bowl.put Microwave on high for 2 minutes .Cool slightly,peel &puree in a liquidizer till smooth,add 1 cup of water& keep aside.Combine the oil &onions in a microwave safe bowl & microwave on high for 1 minutes.Add the capsicum ,mix well & microwave on high for 1 more minute.Add the pureed tomato,baked beans,sugar ,chilli sauce & salt & microwave on high for 5 minutes,stir it once in between after 11/2 min .
Now start preparing for the dumplings, Combine all the ingredients for dumpling in a bowl &divide the mixture into 12 equal portions,roll each portion into a ball & place on a greased shallow microwave safe dish. Now put microwave on High for 2 minute sand keep aside .Atlast when both the dumplings and soup is ready , add the dumplings to the soup and put microwave on high for 1 minute.It's ready to serve hot garnished with grated cheese.

Corn Basil & Fusili Soup

Ingredients Required :

1/2 cup onion,chopped
2 clove garlic,chopped
3/4 cup cream style corn
10 basil leaves,chopped
1/3 cup fusili
1 teaspoon olive oil
2 tablespoons tomato puree,salt and pepper to taste
2 tablespoon grated cheese
basil leaves

Method :

Combine the onion,garlic and olive oil in a microwave bowl and microwave on High for 2 minutes .Add the cream style corn,basil, tomato puree,fusili 3 cups of water and microwave on High for 10 minutes until the Fusili is cooked.Add the salt and pepper and mix well.In winter if you want to try out something spicy ,hot soup then try out Corn Basil &Fusili Soup .Serve it hot and garnish it with cheese and basil leaves .

Makai Shorba

Ingredients Required :

1/2 cup tender corn kernels
1/4 cup onion chopped
2 cloves garlic ,sliced
2 cloves
1" stick cinnamon
2 peppercorns
1 bay leaf
1/4 cup carrots,cubed
1/2 teaspoon crushed coriander
1/4 teaspoon cumin powder
A pinch turmeric powder
1 tablespoon oil ,salt to taste
1 tablespoon chopped coriander

Method :

In a microwave bowl ad 1 tablespoons of oil,the cloves,cinnamon,peppercorns& bay leaf and microwave on High for 1 minute.Add the onions& garlic and microwave for 11/2 minute.Add coriander, carrots,cumin powder,turmeric powder and microwave on High for 2 minutes more .Add the corn kernels,2 cups of water &salt and microwave on High for 5 minutes,stirring once after 5 minutes. Remove from microwave and cool completely ,make a smooth puree in a blender. Atlast transfer it to a microwave safe bowl,add 1 cup of water and microwave on High for 3 minutes.Now Makai Shorba is ready to serve with lemon juice and coriander leaves and ready to eat .

Baked Stuffed Potatoes

Ingredients Required :

2 medium sized potatoes 
1/4 cup onions ,chopped 
1/3 cup mushrooms,chopped
1-2 green chilies ,chopped 
1/2 teaspoon ginger grated 
1 tablespoon boiled green peas
2 tablespoon tomato,chopped
A pinch Turmeric Powder,salt and pepper to taste 
2 cheese slices 
1 tablespoon butter 

Method :

Pierce the potatoes and microwave on High for 5 minutes.Remove  and cool.Cut each potato into half and scoop out centers.use the scooped out potatoes by mashing it and keeping aside ,Take another bowl and combine onion,mushrooms,butter.Microwave on High for 2 minute and stir it once .Add the green chilies,ginger,peas,scooped potatoes and salt.Mix and Microwave on High for 1 minute.Add the tomatoes,turmeric powder and mix.On the skin of the scooped  out potatoes rub salt,pepper and butter.Now take a plate,place it on a plate and fill it with the mushroom,peas mixture and microwave on High for 15 seconds.Remove and place 1/2 slice cheese on each half and microwave on High For 15 seconds .Now the delicious Baked Stuffed Potatoes are ready to serve and eat :)

Tandoori Aloo

Ingredients Required:

1 cup baby potatoes
1 tablespoon cream
1/4 teaspoon kasuri methi ( dried fenugreek leaves)
1 tablespoon oil
Salt to taste
Make paste of following Ingredients:
4 kashmiri chillies
2cloves garlic
12 mm piece ginger
2 teaspoon corriander-cumin seed powder

Method:

Wash the potatoes thoroughly, pierce them with a fork and place them all around the circumference of the microwave turntable.Next place a glass of water in the centre to prevent the potatoes to get wrinkled.Now put microwave on high for 5-6 minute until potatoes are soft.Take a pan , heat the oil in pan and add the prepared paste and salt and mix well, fry it for atleast 3-4 minute and then add salt into it and mix well.Now last step is to add the potatoes , cream and kasuri methi and cook / fry it for 5 minutes.Tandoori Aloo is ready to serve and eat.

Mexican Spicy Corn

Ingredients Required

1/2 cup corn kernels
1/2 cup onions chopped
1/4 cup capsicum chopped
2 green chillies chopped
1/2 teaspoon chili powder
1 tablespoon tomato ketchup
1/4  teaspoon dried oregano
1 tablespoon butter
10-12 cream cracker biscuits or nacho chips
1 tablespoon chopped coriander
Salt to taste

Method :

Combine the butter, onions and capsicum in a microwave safe bowl and put it at a temperature for 2 minutes .Add the corn, green chillies, chilli powder, ketchup and salt and mix well.Cook it for more 1 minute.Next add oregano and salt and mix well .Now ultimately Mexican corn is ready to serve, to serve spoon the mixture onto the cream crackers , and garnish it with coriander leaves.

Masala Peanuts

Ingredients Required :

Are you tired of having the same tea and biscuits in your breakfast and as snacks , then it time to try something new and different , try some kind of salt , tasty snacks with tea/ coffee.
you can try making Masala peanuts at home ,it will hardly take 5 minutes .
Ingredients Required :
1/2 cup salted peanuts
1/2 cup Bengal gram flour ( besan ) 
1 teaspoon  chilli powder.
2 teaspoons fennel (sanuf) powder
11/2 teaspoons black salt (sanchal)
2-3 tablespoons water 
2 tablespoon oil .

METHOD

Mix all the ingredients together in a bowl ensuring the batter coats the peanuts evenly.Take Pan , add oil into it , grease the pan well .When the oil and pan becomes hot ,drop the peanuts coated with batter into the pan, fry it well until it becomes slight brown in color .Now take out the peanuts from the pan and put in on a plate(remember to put some foil on the plate , such that the foil absorbs the excess of oil).Keep it on table , let it cool and then you can have it wih tea / coffee .You can even store in a air-tight container .

Poha Chivda

Ingredients Required :

3 cups thin beaten rice (poha)
1 teaspoon mustard seeds (rai)
1-2 green chillies,finely chopped
4-6 curry leaves
2 tablespoons roasted chana dal( daria)
1 tablespoons unsalted peanuts
1/4 teaspoon turmeric powder(haldi)
1 teaspoon sugar
a pinch citric acid crystals
1 tablespoon oil
 Salt t taste

Method :

Place the poha  in a shaloow microwave safe dish and Microwave on High for 2 mnutes,stirring after 1 minute ,keep aside .Take another microwave safe bowl ,combine the oil and mustard seeds and microwave High for 2 minutes.Add the green chillies , curry leaves,unsalted peanuts , roasted chana dal and turmeric powder and put microwave on High for 1 minute.Next step will be to add this mixture to the poha.Mix well for 1 minute,cool completely. After this mix the sugar citric acid crystals and salt and mix well. Now the poha is ready to serve and eat .You can even store  this poha .Store in a air-tight container .

Cream Cheese Dip

Ingredients Required :

1/2 cup milk
4 cheese slices
2 tablespoons capsicum , finely chopped
1/2 teaspoon cornflour
1/4 teaspoon prepared mustard paste
salt to taste
Method :

 in a microwave bowl , add the milk, cheese slices,capsicum and cornflour, mix well and Microwave on High for 2 minutes, stirring once after 1 minute. Remove it and allow it to cool.Now atlast add the mustard paste and salt and mix well.Now after all the above method is done it is ready to serve . Serve it with nachos or vegetable crudites.Now the wait is over  as it took only 2 minutes for preperation time and 2 minutes cooking time , and it's ready to eat .

Bar-Be-Que-Dip

Ingredients Required:
1 tablespoon vinegar
1 tablespoon lemon juice
½ cup water
½ cup onions, finely chopped
2 tablespoons sugar
¼ cup butter
½ teaspoon pepper
½ cup ketchup
2 tablespoon Worcestershire sauce
¼ teaspoon chilli flakes
1 teaspoon salt
1 teaspoon cornflour mixed with 1 tablespoon water
Method:
Combine all the ingredients except the corn flour paste in a deep microwave SAFE BOWL AND MIX WELL .Microwave on High for 4 minutes stirring once in between after 2 minutes. Add the corn flour paste, mix well and microwave on High for 2 more minutes. Now the yummy Bar-Be- que Dip is ready to serve and eat. Serve it in room temperature. You will enjoy eating this specially in winter, So try out this recipe at your home this winter.

Macaroni Hot Pot


Ingredients:
¾ cup cooked macaroni
2 onions
1 large capsicum
3 large tomatoes
2 clove garlic, crushed
1 teaspoon chilli powder
1 small can baked beans
5-6 tablespoons tomato ketchup
¼ cup grated cooking cheese
1 tablespoon butter
Salt to taste
Method:
Cut the capsicum and onions into rings; keep aside a few rings of onions and capsicum for garnish. Put the tomatoes in a microwave safe bowl and microwave on High for 5 minutes. Cool and remove the skins and puree in a food processor. Put the butter in a microwave safe bowl and microwave on high for 30 seconds. Add the onion rings and microwave for 30 seconds. Add the capsicum rings and microwave on High for about 2 minutes. Add the garlic, tomato puree and chilli powder and microwave on High for 2 minutes, stirring once in between after 1 minute .Add the macroni, baked beans, tomato ketchup and salt and mix very well .Cover with the capsicum and onion rings and sprinkle the cheese on to. Now yummy macaroni is ready to serve and eat.

Singapore Noodles


Ingredients:
1 cup rice noodles
¼ cup spring onion whites, sliced
½ teaspoon garlic, chopped
½ teaspoon ginger, chopped
1 teaspoon celery, chopped
¼ cup capsicum, CHOPPED
¼ CUP BEAN SPROUTS
1 TEASPOON CURRY POWDER
1teaspoon soya sauce
A pinch turmeric powder
1 teaspoon sugar, salt and pepper to taste
1 table spoon oil
¼ cup spring onion greens, chopped ( for the garnish )
Method:
Take 2 cups of water in a bowl, let it boil now add the noodles and allow it to stand till the noodles are soft. Drain out all the excess water. Take another  non stick pan  pour a bit of oil and fry onions, garlic, ginger and celery , add capsicum and fry it well .Now add the noodles , bean sprouts, curry powder, soya sauce, turmeric powder, sugar and salt and pepper and mix well. Now Noodles are ready to serve hot, Serve hot garnished with the spring onion greens.

Paneer Bhurji Toast


Ingredients Required:
1 cup paneer crumbled
½ cup onion chopped
½ cp tomatoes chopped
1 teaspoon chilli powder
¼ cup capsicum, chopped    
2 tablespoon oil
 Salt to taste
4 bread slices
2 tablespoon coriander
Method:
 Take the oil in a non stick pan and add the onion, now fry it well till it becomes brown .Add the tomatoes, ginger, greenchilli, turmeric powder and chilli powder, and again fry it well, fry it for 10 minutes .After this add capsicum and salt and heat it well on High Temperature. After you have fried well all the ingredients add paneer and mix well.
Now take the 4 slices of bread and grill it well for 5 minutes till it becomes crisp and light browned .Then divide the mixture into 4 equal parts and top the paneer bhuji on the toasts and garnish with the coriander and serve immediately . Try this delicious recipe at home, you will love it .

Green Peas Dhokla


Ingredients Required
½ cup Bengal gram flour
½ cup green peas
1 teaspoon ginger-green chilli paste
1 tablespoon powdered sugar
½ cup water
¼ teaspoon citric acid
¾ teaspoon Eno’s fruit salt
Salt to taste
Method:
Puree the green peas to a smooth paste using a little water. Add all the above ingredients to the green peas paste and mix it well. Pour into 150 mm, diameter and 25mm.High , greased microwave safe dish with a lid and microwave on High for 3 minutes ,covered ,Now let it remove and let it stand for 2 minutes .
Ingredients for tempering:
1 tablespoon oil
1 teaspoon mustard seeds
2 green chillies, finely chopped
A pinch asafoetida
1 tablespoon water
Combine the oil and the mustard seeds in a small microwave safe bowl .Cover with lid and microwave on high for 11/2 minutes .Add the green chillies and asafoetida and microwave on HIGH for 1 more minute .Remove from the microwave and add 1 tablespoon of water
For Garnish:
1 tablespoon chopped coriander
1 tablespoon grated coconut
Spread the tempering over the dhoklas and cut into squares pieces .Garnish with coriander and coconut
Now your dhokla with garnish and tempering is ready. Serve hot and it’s ready to eat.

Idli

NOW MAKE Idli’s at home
Ingredients Required:
1cup rice (idli rawa)
¼ cup beaten rice
¼ cup split black gram
Salt to taste
Oil for greasing
Method:
Wash and soak the idli rawa and beaten rice in water for at least 2 hours. Drain and keep aside. Wash the urad dal thoroughly and soak it in water for at least 2 hours. Drain and keep aside .Blend the idli rawa and beaten rice along with approx, 1 cup water in a blender to make a smooth batter. Then grind the urad dal separately to a smooth paste using a little water. Mix the two batters and add salt. Cover and keep aside for 6-8 hours for fermenting .Heat 1 cup of water in a microwave safe idli steamer on HIGH for 2minutes. Put 2 tablespoons of batter in each of the microwave safe idli moulds. Atleast let stand for 2 minutes and unmold .Atlast serve it hot. Serve it hot with chutney or sambar of your choice.

Home made Muffins

MUFFINS
Ingredients Required
135g plain flour,sifted
1tsp baking powder
35g golden caster sugar
Pinch of salt
1egg
50ml sunflower oil
85ml milk
80g blueberries
80g raspberries
Preheat the oven to 200C/gas mark 6.Line6 muffin tin with muffin paper.
In a large bowl,thoroughly mix together all the ingredients.Spoon the mixture into the muffin tin,fill the papers to the top.Bake for20-25 minutes or until they are golden.To test if they are cooked in the middle,insert the point of knife –if it comes out clean,they are ready to eat, if the mixture is still loose,put them back in the oven for a few more minutes.Remove from tin and cool on a wire rack.
Rap in clingfilm or a place in a freezer to freeze it.Now your Yummy!!! Muffinis ready to eat .You can have it in the morning when you wake up and refresh your taste bud and your mood . you can freeze this muffin for 1 month .this was the recipe for 6 muffins , depending n the number of muffins you have to make , increase the quantity of ingredients .

GREEN CURRY

Thai Green Curry
Ingredients Required:
1tbsp grape seed oil
1 shallot, peeled and finely chopped
½ lemon grass stalk, finely sliced
1 clove of garlic peeled and crushed
1 spring onion, trimmed
Zest and juice of 1 lime
1/4tsp coriander seeds, roasted and ground
1/4 tsp ground cumin
4cm piece of fresh ginger, peeled and grated
½ red chilli, seeded and thinly sliced
1tsp Thai fish sauce
3 basil leaves
1 tbsp chopped fresh coriander
1tsp peanut butter
½ can coconut milk
1 chicken breast and 1 thigh, skinned, boned and cut into pieces
1tsp chopped cashews, to garnish
Method:
Heat up a large wok and add oil. Quickly fry, in this order, the shallot, lemon grass and garlic. Add all the remaining ingredients, except the coconut milk, cashews and chicken. Take the wok off the heat, and then pour in the coconut milk. Let the sauce cool. Put the chicken into a non-metallic bowl. Pour the sauce over the chicken, cover with Clingfilm and marinate for a minimum o 2 hours-the longer, the better.
Preheat the oven to 200C.Transfer the chicken and marinade to an ovenproof dish and cook for 12 minutes. Stir, then cover with foil and cook for another 5 minutes. The coconut milk will split but it won’t affect the taste. Garnish with more herbs and cashew nuts and serve with jasmine rice .Now break your hunger by having this mouth watering dish .LOVE AND ENJOY EATING .

SPAGHETTI
Ingredients Required
10 broad beans
100g spaghetti
Salt
2-3 tbsp olive oil
2 shallots, peeled and crushed, or tsp prepared garlic
½ clove of garlic, peeled and crushed, or tsp prepared garlic
Handful of fresh flat-leaf parsley, roughly chopped
Butter
Grated Parmesan cheese
15g pecorino cheese
Method of preparing
Prepare broad beans by shell them, then blanch in rapidly boiling water. Drain the beans, and then plunge them into ice-cold water for a minute or two. Pop each beans out of its pale green skin by pinching with thumb and forefinger. Take a pan of Salted water up to the boil and cook the spaghetti until it is still has a little bite to it.
While the pasta is cooking, the heat the olive oil in a large frying pan and soften the shallots. Add garlic, parsley and a splash of the pasta water and gently cook over a medium heat. Drain the pasta, reserving little of the cooking water, and add the pasta to the onion mix. Toss in the broad beans and season with salt and papper.Add the butter and gently stir so that the pasta is thoroughly coated, adding a little of the reserved water if it is too dry. Crumble in the cheese and add a little more parsley. Change the seasoning and adjust it according to your taste .Now it’s ready to be served.

Morning Breakfast

PORRIDGE
Ingredients Required :
50g oatmeal
150ml milk
Mix the oatmeal and milk into saucepan with 150ml water and boil it .Turn Down the heat and simmer for about 5 minutes, it is important to simmer to cook oatmeals or else it will stick to bottom of your vessel.
Now after the oatmeal is cooked put the saucepan  down and serve it with double cream and brown sugar or yoghurt and honey.You can also add all sorts of other delicious goodies to the porridge,such as sultanas,desiccated coconut,toasted almonds,hazenuts, dried cranberries.Once your Porridge is ready have it and let your taste bid run wild !!! Break your morning hunger by having Porridge .

Pasta

Pasta with Asparagus and lemon
Ingredients Required
4 thick asparagus spears
50ml double cream
Zest and juice of 1 lemon
Butter
Salt
100g tagliatelle
1 organic egg yolk, beaten
50 g parmesan cheese
Fresh-flat leaf parsley, roughly chopped
Methods of preparation
Sort out the asparagus; blend it, cut the ends of asparagus with knife if necessary.
Take a large shallow pan of water up to the boil. Cook the asparagus spears in the boiling water for3 -5 minutes or until they are tender, but don’t overcook the. Drain and cut into bite-sized pieces and set aside gently warm the cream in saucepan, the ad the Leon zest, juice and butter Remove from the heat and set aside.

Bring the pan of water to a rapid boil and add a generous amount of salt to the water. Cook the pasta according to the instruction and drain. Pour the lemon sauce over the drained pasta and stir in the egg yolk, then fold in the asparagus, Parmesan and Parsley. Now your delicious pasta is ready to eat and serve it to your guest. Spicy Mushroom

Mushroom
Ingredients Required:
2 Portobello mushrooms, stalks removed
Olive Oil
Salt and freshly ground black pepper
Butter
1 shallot, peeled and finely chopped
Handful of mixed wild mushrooms, left whole if small or cut in half or smaller if very large
1 small clove of garlic, peeled and crushed
1tbsp chopped fresh flat-leaf parsley
1 tbsp cream
Crustly bread
Method:
Lay the mushroom on a shallow baking tray, drizzle over some olive oil and season with salt and pepper. Bake for about 8 minutes, until they are soft .Meanwhile, heat up a little oil and butter in a frying pan. Cook the shallot until soft, then add the wild mushrooms, garlic, most of the parsley, salt and pepper.Dont let the garlic burn.After5-8 minutes, when the mushroom are tender, stir in the cream and simmer for 2 minutes to let the sauce thicken.
Take the mushroom out of the oven. Spoon the wild mushroom mix with the other mushroom and sprinkle over a little more chopped parsley. Now you top it with the slices of Brie and return to the oven for a few minutes so that Brie just start to melt .At last serve with crusty bread .

Bake Pizza in Few Minutes

Home-Made Pizza
Ingredients Required
How to make Pizza Dough
40g fresh yeast
125ml milk, at room temperature
175ml hand-hot-water
300g flour, sifted
40g strong plain flour, sifted
3g salt
Olive oil for greasing the bowl
Pizza toppings:
Good thick tomato sauce
Cheese, thinly sliced
Large basil leaves
Method of making:
Proof the yeast with milk and water by crumbling the yeast into the liquid and leaving for 10 minutes. Mix the yeast with the sifted flour and knead for 10 minutes-the dough should be sticky, Add more flour if necessary. Whatever happen, you must not end up with stable dough-it should be threatening to stick to the bowl. Let it rise in an oiled bowl in a warm place for about 1 hour until doubled in size .Shape half the dough into a pizza shape-pull ad stretch it, but  do not roll. Let it rise for about 10 minutes. Preheat the oven to 180C.

CHICKEN
Ingredients Required:
75g clarified butter made with unsalted butter, plus extra for sealing ( about 200g)
Blade of mace
Good grating of nutmeg
Pinch of cayenne pepper
Salt and freshly ground black pepper
150g cooked chicken-a mix of white and dark meat
1 ½ tsp finely chopped fresh parsley
Methods:
Put the clarified buttered spices into a bowl set over a pan of simmering water and melt over a gentle heat. Leave to infuse for at least 1 hour or more Remove any large pieces of spice, like the blade of mace.
Preheat the oven to 160C.Gently stir the shredded chicken and parsley into the spiced butter and spoon into a ramekin, Place the ramekin in an ovenproof saucepan and pour in enough boiling water to come halfway up the side of ramekin. Bring to the boil, and then transfer to the oven for 25 minutes. Remove the ramekin and allow cooling. Melt more butter and pour over the top of each ramekins seal. Refrigerate until ready to serve. Remove from the fridge 20 minutes before eating and after that serve it with warm toast.

Blue Cheese Burger
Ingredients required
100g good-quality beef
Worcestershire sauce
Salt and free ground black pepper
25g blue cheese
1 soft white bap
A little olive oil
1nd1/2 tsp spicy tomato chutney
Slice of tomato
Iceberg Lettuce Leaf
Method:
 Put the beef into a food processor and pulse so that it is mi, but do not overwork it. Transfer to a bowl and add a dash of Worcestershire sauce and some salt pepper. Mix it well with your hand, and then form it around the cube of cheese to make patty shape. Place in the fridge for at least few minutes or longer if you have time .Heat up the grill pan s that it is smoking .Split the bap in half, toast THE INSIDEAD SET ASIDE. Take THE Burger out f he fridge. Put a little olive oil your hand and gently massage into the burger. Cook on the grill pan for about 2-3 minutes on each side.
Spread the chutney on the lower half of the bap, and then add the total slice, the burger, and then the lettuce. Top with other half of the Bap.

Ingredients required:
400g porridge oats
175g bran
180g toasted mixed nuts- such as almonds, walnuts, e.t.c
200g chopped mixed dried organic fruits-such as figs, apricots, apples, dates, e.t.c.
The procedure to make it is very simple and not time consuming, what you need to do is just mix all the muesli ingredients together and store in an airtight tin.
Now to serve the Museli you need to mix the following ingredients with it:
-mix a teacup of the muesli
-natural yoghurt
-berries
-grated apple
-hazelnuts together and stand overnight in the fridge or for an hour or so. Spoon into a glass bowl. Croissants

Ingredients Required
6croissants
100g marzipan,broken into small pieces
50g toasted sliced almonds
50g milk chocolate,chopped
Method:
Heat oven to 180C.Slice into each croissant lengthways,they should open like books.Sprinkle the bottom half of each with marzipan followed by1tsp almonds and 1tbsp chocolate.Close up,put on a baking sheet and sprinkle the remaining chocolate and almonds on top.Bake for 5min or until chocolate has melted.Now the chocolate Croissants are ready to serve warm .

Homemade Chocolate

Ingredients Required

200 ml double cream
75g sugar
250 g dark chocolate finely chopped
50g desiccated coconut,lightly toasted.
100g dried cherries,chopped
Extra 150g dark chocolate finely chopped to coat .

Method:

Put the Cream,sugar,and a pinch of sea salt into a pan.Bring to the boil over a medium heat,stir to dissolve the sugar,then reduce the heat and simmer for 1 min.Put the chopped chocolate into a bowl.Remove the pan from the heat,pour the hot cream over the chocolate,then stir until the chocolate has melted and mixture is smooth.Add the flavour of cherry and coconut and mix thoroughly,then cool and set to fridge for about 2hrs .Scoop 1tsp of truffle mixture into the palm of hand.Quickly roll into a ball and put on the lined baking tray.Chill truffles until firm.To temper the chocolate for coating the truffles,place 100g of finely chopped chocolate in a small bowl set over a pan of barely simmering water-the bottom of the bowl should not come into contact with the water or chocolate may scorch.Stir the chocolate until melted and smooth.Remove the bowl from the pan and add the remaining 50g chopped chocolate.Stir until melted and thoroughly combined and the chocolate has cooled and thickened slightly.Return the bowl to the pan and warm the tempered chocolate over water once more.Next lay out a clean sheet of baking parchment.Take 1truffle at a time drop into the tempered chocolaye.Use a fork to roll the truffle to coat in the chocolate,then lift it out and allow the excess to drip back into bowl,tapping the fork on the edge.carefully slide the truffle off the fork onto clean baking parchment.Keep it to harden before packaging them in paper cases .

Ingredients Required :

For Biscuits :
100g butter
175g dark Sugar
85g golden Syrup
350 g plain flour
1tbsp ground ginger
1/4 tsp ground cloves
1 tsp ground cinnamon
1tsp bicarbonate of soda
1egg beaten
To Decorate ;
300g icing sugar
16 lolly sticks
Few sweet sugar,for sprinkling red and white tubes of writing icing .

Method :
Gently melt the butter,sugar,syrup in a large pan until the sugar dissolves.Mix the flour,spices and 1/2 tsp salt.Cool the butter mixture a little,then stir in the bicarb.Immediately add half the flour and beat well.Add egg and rest of the spiced flour,then beat well again until the mixture comes together as a soft dough.Tip onto a sheet of foil,flaten to a large disc,then cool and chill until firm.Freeze for 6 weeks.Heat oven to 190C.Halve the dough and roll out on a floured surface.Stamp out trees using a cutter about 10 cm long and arrange,well spaces apart on baking sheets.Bake for 12-15 min until golden.Harden it and then lift onto a rack.To decorate,mix about 3 tbsp water into the icing sugar to make thick icing.Use to Sandwich two trees together with a lolly stick between them.Use the rest of the icing to ice the trees and stars adding sweets or sprinkling with the sugar.Now the biscuits are readu to eat ,keep it in a tin for 3-4 days .

25g butter
400g shallot ,thinly sliced
1bay leaf
500ml double cream
1tsp thyme leaves
1kg potato ,peeled thinly sliced

Heat butter in Shallow Pan. Add the shallots,bay leaf, thyme and cook for 10min until soft,golden and sticky.Pour in the cream and boil it.Now season it with nutmeg.
Now heat oven to 200C.Place the potatoes in a pan of cold water,boil it and then drain it.Butter a large gratin dish,then layer it up with potatoes and cream,finishing with good shallots.Before baking chill it for day and then Bake for 40 min untill it is golden and crispy .Now it's ready to eat .

Chickpeas ...cook !!!!

Curried Chickpeas
Ingredients Required :
2tbsp vegetable oil
1tbsp cumin seed
2chillies,chopped
1clove
1cinnamon
1bay leaf
1onion,finely chopped
1/2,tbsp ground turmeric
2garlic cloves,finely chopped
400g chickpeas
1tbsp papirika
1tbsp ground coriander
2 tomatoes.,chopped
1chopped coriander

Method.:
Heat the oil in a pan.Fry the cumin,chillies,clove,cinnamon and bay leaf together until cumin starts to crackle.Tip in onion,turmeric ,pinch of salt.Cook for 2min  ,then add garlic .Cook until onion is soft then add chickpeas,papirika,black pepper,ground coriander.Stir well such that chickpeasixes well with the spices. Add the tomatoes and 2tbsp water.Cook in medium heat until tomatoes are soft and sauce is thick and pulpy.Take off the heat and serve it with sprinkle of coriander.

Pancakes with mustard Dressing

Ingredients Required for dressing
1tbsp vegetable oil
5curry leaves
1tbsp brown mustard seed
1green chilli finely chopped
1tbsp grated ginger
1tbsp honey
250g yogurt
Ingredients for Pancakes :
1tbsp cumin seeds
1tbsp ground coriander
1/2tbsp ground turmeric
1tbsp baking powder
100g flour
50g onion finely chopped
175g parsnips grated
1tbsp oil
1grated ginger

Method:
For the dressing heat the oil in a non-stick pan and cook the curry leaves and mustard seeds for 1mim.Stir in chilli,turmeric,ginger,cook at low heat for 2-3min.Remove from heat and leave to cook completely.Stir the cooled spice mix into whipped yogurt along with honey,now keep it to cool it.
To make pancakes,combine all the ingredients ,apart.from oil with 200ml cold water and a pinch of salt.Mix until thick batter is formed.15min before you want to serve the pancakes,heat a large non-stick frying pan and add 1tbsp oil.Place a few tbsp of the mixture in the pan to form a roundpancake about 1-2 cm thick.Cook for 2-3 min until holden brown,then flip over to other side to cook until it is brown.Now the last thing to do is to serve the cakes with honey and mustard.dressing .

Apple Tart
Ingredients Required:
140g butter
85g sugar
1beaten egg
250g plain flour
2full tbsp  ground almonds
6 apples,peeled,cored ,cut into dice.
140g caster sugar
1 vanilla pod
2tbsp brandy
1/4 tsp cinnamon

Method:
First make the pastry.Cream the butter and sugar until light and fuffy,gradually pour in egg and mix well.Add the flour and ground almonds and bring together to form a soft dough.Wrap in foil and chill in fridge for 1 hr.Now make the filling by cooking the apples,sugar,vanilla and brandy on a medium heat for 8-10minutes until it has started to break down.Now allow it to cool.Heat oven to 180C. Remove the pastry from the fridge and gently roll out on a lightly floured surface,make it thick.line the base and the sides of 27cm in loose bottomed tart tin with pastry.Cover with baking parchment  and fill with baking beans.Cook for 20min then remove  the beans and return to oven for 10-20min,until it has become golden and cooked properly.Now remove it and allow it to cool.To make the crumble topping,increase the oven temperature to 200C and put in all the ingredients into a bowl along with pinch of salt.Now rub it with your fingertips until it look like crumbs.Spread the mix onto a baking tray,place in the oven and bake for 20-25 min until golden brown,stir it properly to get even color. Assemble the tart by filling the pastry case with apple mixture,then cover with the golden crumbs.And last thing to do is Serve it with custard ,and Enjoy eating :) :)

225g butter
225g caster sugar
275g flour
2full tsp baking powder
4large eggs
2tbsp milk
1/2vanilla extract
11/2 full tbsp cocoa powder
2tbsp hot water
25g white chocolate melted .

Method :
Heat oven to 160C.Butter a 900g loaf tin and line with a wide strip of non-stick baking parchment,to go up the wide sides and over base of tin.Take another clean bowl and mix butter,sugar,flour,baking powder, eggs,milk and vanilla extract  for about 2-3min,blend it properly.In another bowl mix cocoa powder and hot water together until smooth.Allow it to cool for sometime then add the cake mixture ,mix it well until it is well blended.Next spoon the  cake mixture randomly into the prepared tin and gently level the surface.Bake for 50min-1hr ,until the cake is well risen.Allow it to cool in the tin for few mins,then turn out on a wire rack,peel off the lining paper and leave to cool completely.Last is to make the cake icing, and for that melt the butter in a small pan,add cocoa powder,stir to blend and cook gently for 1min.Stir in the milk and icing sugar,mix it well to make it thick.Spread the cold cake with icing evenly ,then drizzle the melted white chocolate over the top .Your delicious cake is ready to eat .

Try out Roasted Apple at Home

Roasted Apple
Ingredients Required:
50g dried breadcrumbs
8dried apricots,chopped
75g cinnamon sugar
1orange juice
6 apples
Custard or vanila ice -cream

Method:
Heat oven to 180C.Mix breadcrumbs,butter,apricots,cinnamon sugar,zest.Next For Roasting apple initially remove the center of apple,score the skin across equator.Pack the filling into the apples,then sit them snugly into an ovenproof dish.Mix together the orange juice and 150ml water and pour round the apples.Roast for 40-50min until it is browned and soft.Now roasted apple is ready but the last thing to do is to serve it with sticky pan juices and custard or ice-cream.

Crunchy Fish Cakes

Fish Cakes
Ingredients Required:
1 kg potatoes,peeled and chopped
1kg mix salmon
1lemon juice
Bunch of spring onion,chives,chopped,parsley chopped
4 tbsp tartar sauce
3egg ,beaten
100g plain flour
250g breadcrumbs
2tbsp olive oil

Method :
Cover the potatoes in cold,salted water and boil it.Cook for 10-12min until tender.Drain and Steam dry for a few mins ,then mash and set aside to cool.Till then cook the fish.Cover in cold water and bring the lemon juice to simmer,then poach for 5min.Remove from water,remove the potato skin and flake into large chunks.Put the lemon zest,herbs,spring onion,tartar sauce and some seasoning into a large bowl with fish and the potatoes.Combine all the ingredients then divide into 8-10 and shape into cakes.Put the eggs,flour and breadcrumbs on 3 different plates .Dip each of the fish cakes in flour,then egg.Finally coat in the breadcrumbs and transfer to another tray.Freeze the fish cakes for 1-2days.Next grill it to medium and brush the fish cakes with oil and grill for 4-5mins each side until it is golden and hot through.Now it is ready to serve,so serve with extra tartar sauce and salad .

140g small pasta

Method :
Cook the onion,carrots, and celery in oil in a large saucepan for 20min until soft.Splash in water,if you find it sticking on pan .Next add sugar,garlic,puree,herbs and courgettes and cook for 4-5min on a medium heat until they brown a little.Pour in the beans,tomatoes and stock then simmer for 20mins.Add cheese and pasta and cook for 6-8 min until pasta is cooked.Now once your pasta is ready , you can serve it with sprinkle of cheese and basil, and you can have it hot or frozen .

1litre pints milk
2garlic cloves,bashed
2bay leaves
500g dried pasta
350g broccoli
75g butter
75plain flour
1tsp mustard powder,small bunch parsley

Bring the milk ,garlic and bay leaves to the boil in a small saucepan,then remove it from heat.Cook the pasta .Strain the milk into a jug.Heat the butter in the pan until foaming then stir in flour for 1min. Add the milk a little at a time,stir constantly.Bubble for 1-2mins, make sure that you have thick lump free sauce so stir constantly.Remove from heat and stir in some nutmeg,the mustard powder,parsley ,three-quarter of the cheese and seasoning.Combine with the pasta and broccoli and transfer to one large heatproof dishes.Scatter over the remaining cheese and cool,or grill to high and cook for 2-3 min until golden and bubbling.Now your Cheesy broccoli pasta is ready to eat .

Cherry Shortbread Hearts
Ingredients Required :
100g icing sugar
200g plain flour
50g cornflour
50g ground almonds
250g cold butter
50g cherries finely chopped
1/2tsp almond extract
8tbsp cherry jam

Method :
Heat oven to 180C .Stir icing sugar,flour,cornflour with ground almonds and butter together in a bowl.Next Stir in the chopped glace cherries and almond extract, and bring together to form a dough.Roll out on a lightly floured surface,after that stamp out biscuit using a heart-shaped cutter.Keep re-rolling the trimmings until all the dough is used.After this transfer the biscuits to baking trays lined with parchment and bake for 8-10min until it becomes golden.Using an upturned bottle top press gently into the center of each biscuits to make a round indent.Spoon in a little jam and return to the oven for 2mins.Last step will be to Remove and cool on a wire rack,before dusting with icing sugar to serve.Now it's ready to eat and serve your guest .:)

Ingredients Required:
250g butter,cocoa for dusting
350g dark chocolate chopped
2tbsp ginger wine
140g caster sugar
5eggs
75g ground almonds
1 tsp ground ginger
150ml double cream

Method :
Heat oven to 170C.Butter and line a 23cm round spring form tin with a disc of buttered baking parchment.Lightly dust the inside of the tin with cocoa.Put the chocolate and butter into a medium-size heatproof bowl,add the ginger wine and set the bowl over a pan of barely simmering water.Stir occasionally until melted and smooth.Remove from the heat and cool slightly.Next mix the egg and sugar together.Whisk until pale and light.Pour the melted chocolate and butter into the yolks and stir until smooth.In another bowl whisk,beaf the egg whites with pinch of salt until they hold a stiff peak.Sift the almonds and ginger into the chocolate mixture and fold in using a spoon.Now add one-third of the egg whites and stir in to loosen the mixture.Spoon half the mixture into the prepared tin and gently spread it by a knife.Now bake in oven for 50mins .Make sure that cake is cooked properly.Allow the cake to cool. Cake is ready to eat.

50g mashed ripe banana
1tsp vanilla extract
100g brown sugar
11/2 tsp grated orange zest
100g wholemeal flour

100g rolled oats
25g desiccated coconut
50g choppes walnuts
75g dark chocolate chips.

Method:
Heat oven to 180C. Cream the butter and egg together until well blended and smooth.Gradually beat in the banana,vanilla extract and brown sugar.Add zest.Mix well and blend it properly.In a large bowl, mix flour,salt,baking powder,oats,coconut,walnuts,chocolate chips.Stir the dry ingredients into the wet and mix thoroughly until a thick dough is formed.Drop heaped tbsps onto the sheet,leaving a 5cm space around each one,and push down lightly.Bake for 15-20 mins until lightly browned. After that cool it down,after it gets cooled down .have it .

Ingredients Required :
250g brown basmati rice
2tsp turmeric
5tsp flaked almonds
6 tbsp yogurt
4chicken breasts,cut into chunks
8medium tomatoes,halved
2large red onion,finely sliced
1/2 small bunch coriander

Method:
Heat oven to 220C.Put the rice in a saucepan with 600ml water,1tsp turmeric,1tsp curry powder and small salt.Bring to the boil,stir,cover,turn heat to low and cook for 30min,till it becomes tender.Try not to take lid off during cooking.Remove from heat and leave covered for 5mins.Next add almonds.Now mix 2tsp curry powder,turmeric ,2tbsp yogurt,add chicken and toss to coat.Toss the tomatoes and onion in a roasting tray with the rest of the curry powder,nestle in the.chicken pieces.Bake for 15-20mins until the chicken is cooked through and the veg are soft.Scatter over the coriander and serve with rice and remaining yogurt .

Blueberry Cake

Blueberry+Coconut Cake
Ingredients Required:
250ml rice bran oil
3-4eggs
225g caster sugar
2tsp vanilla extract
300g flour
50g coconut
175 ml soya milk
140g frozen blueberries,sugar to dust.

Method :
Heat oven to 180C.Whisk oil,eggs,sugar,vanilla in a large bowl.Combine flour and coconut.Fold the flour mix and soya milk into the wet ingredients.
Spoon a quarter into the tin.Fold the blueberries into remaining batter, then spoon into tin.Bake for 1hr  or until skewer comes out clean.Cover the cake with foil if it browns too quickly.Cool in tin for 10min,then turn out onto a wire rack and cool completely.Fill the Centre of cake with extra blueberries and for serving it dust icing sugar over the cake.Now tour yummy cake is ready to eat .

Heat the oven to 180C and line a muffin tin with 10cases.Mix all dry ingredients till they get combined,then stir in milk,egg,oil.Now fold the leek and Cheddar.Spoon the mixture evenly into the muffin cases and place in the oven.Bake for 25min,and check whether it is baked or not by inserting a toothpeek in center of muffin,and notice that toothpech comes out clean .Now muffins are ready to eat .

Heat the oil in a large pan,tip in the onion and cook for 10min until golden and soft.Add pork and mushroom and cook on a high heat for 2-4 min until it is browned.Now add paprika and cook for 2min.Stir the tomato puree and pour on the stock and simmer for 6-10min,cook until the pork is properly cooked.Al last mix the soured cream and some seasoning.Now you can serve it with egg noodles or rice.

Egg Fried Rice.

Egg And Vegetable Fried Rice
Ingredients Required:
200g basmati rice
2 red chillies,finely chopped
4garlic cloves,crushed
1tbsp oil
2-3 large carrots,finely chopped,diced
200g cabbage,sliced finely
2-3eggs ,lightly beaten
3-4 onion, sliced
250g frozen peas
1tbsp soy sauce

Method :
Mix the chillies and garlic with a pinch of salt in a mixer grinder to make a paste.Next heat oil in a large frying pan on a medium -high heat.Add the carrots and stir-fry  for 5-10 minutes until it is tender.Now add the cabbage and chilli paste and cook for 2 minutes.Next tip in the cooked basmati rice and stir -fry for 1min until it's hot. Put aside the rice mixture to one side of the pan.Add the eggs to the cleared space and fry it with onions,peas,soy.Fry it until the peas are hot .Serve the vegetable egg fried rice hot and enjoy eating :) :)

Try out Apple Burger

Apple Burgers
Ingredients Required:
9 pork sausages
1apple,peeled,cored,grated
1tbsp chopped sage leaves
2tbsp red wine vinegar
11/2 tbsp caster sugar
1small red onion,finely sliced
200g red cabbage,finely sliced
2tbsp mustard
5bread rolls,split into half

Method:
Heat oven to 200C. Squeeze the meat out into a bowl.Stir through the grated apple and sage,then shape into 4 patties.Next place the burgers on a baking sheet and cook for 20-25 min until it is golden and cooked properly.By the time burgers are becoming golden you can mix the vinegar and sugar together with some seasoning.Stir well to dissolve the sugar and after that stir  in the  onion,cabbage and mustard.leave it to stand and soften while the burgers finish cooking.Place a burger in each roll and top with some pickled cabbage.Now Apple Burger is ready to eat. Noodles

SINGAPORE NOODLES
Ingredients Required :
4 medium egg noodles
2tbsp sunflower oil/any oil
100g tenderstem broccoli
1red pepper
90g baby corn
2garlic cloves
2red chilli,deseeded,chopped,thumb size piece fresh ginger,peeled and finely chopped
3-4 skinless chicken breasts,sliced
100g shelled raw king prawns
1 full tbsp Madras curry paste
2tbsp soy sauce
100g beansprouts
15g coriander,chopped
4 spring onion

Method :
Pour boiling water over the noodles and leave to soften.Till then heat the oil in a large non-stick pan and stir-fry all the vegetables,except the beansprouts and onion, mix the garlic,chilli and ginger until softened.To make broccoli softer ,add a splash of water to the wok and cover it to create some steam.
Tip the vegetables on to a plate, add the rest of the oil to the wok then stir-fry the chicken and prawns until cooked.Set aside the vegetables and add the curry paste to the pan.Stir-fry for a few secs then add 150ml water and the soy sauce.Allow to bubble then add the drained softened noodles and beansprouts ,and toss together to mix well.
Now again return the vegetables,chicken,prawns to the wok with the coriander and spring onions.Toss well over the heat and atlast you can serve it hot with lime wedges.

Cheese and Rice Souffle

Combination of cheese and Rice
Ingredients Required
11/2 tsp butter
45g rice
20g cheese
1tsp plain flour
125ml milk
1egg yolk
Pinch of pepper
Pinch of salt
1egg white ,stiffly beaten

Method :
Preheat the oven 200C. Grease a small souffle dish and dust with cheese.Cook the rice in a pan of boiling water for 8-10minutes,then drain.Melt the butter in a small saucepan.Add the flour and stir in well,then add the milk slowly,whisking until smooth.Next and the egg yolk and cheese and stir until cheese has melted.Now stir it with pepper,salt,rice and mix well.Remove the pan from the heat.Fold in the egg white very gently, then pour into the souffle dish.Now cook the food by placing it in the middle of the oven and cook for 20-25 minutes until well risen and golden on top.After its done it's time to serve it hot with green salad.

Combo of Baked Apple and Custard

Custard
Ingredients Required
1Apple,cut into slices or scored horizontally
Blackberries
1tbsp golden caster sugar
Butter
2large egg yolk
1tsp cornflour
300ml milk
1vanila pod,split
11/2 tbsp caster sugar

Method :
Preheat the oven to 190C
Put the blackberries into the hole left by the core of the apple to come three quarters of the way up the apple.Spoon over the sugar and butter.Put the apple into a shallow baking tray and bake for 20-25 minutes depending on size of the apple.
Now to make the custard,whisk together the egg yolks and cornflour in a bowl,then set aside.Pour the milk into a pan,scrape the vanilla pod seeds into the milk and add the sugar.Gently bring to a simmer.Take the milk off the heat and add to the egg yolk little by little,whisking constantly until it is all combined.Tip the mixture back into the pan ans stir over a gentle heat until it coats the back of a wooden spoon.Now your custard and baked apple is ready ,so now you can serve it to guest .
